DUNER / DONNER KEBAB





Duner (or Doner) Kebab became popular in Bulgaria in the beginning of the 90's when people from the Middle East opened two fast food restaurants in downtown Sofia. The restaurants were named Mimas, open 24/7 and are still working in full capacity today.
The Mimas restaurants became favorite place amongst the younger generation of Sofia. Everybody loved the amazing flavor, convenient style of the wraps and sandwiches and the quick preparation. The cooks are middle eastern guys who have a typical friendly and funny attitude and like to joke with the customers. Other wraps and sandwiches they make are Suju and Falafel. Nowadays there are many similar restaurants and Duner stands all over the country, and they all offer the same exact style and flavor of food.

Bulgarians, like myself, who live abroad and do not have the chance to eat Duner or Suju often, feel nostalgic about the food. Here is why I did some research during my last visit home and explored the recipe closely. I was able to recreate the Duner at home with simple preparation, as well as the unforgettable flavor from Mimas! Try it yourself - enjoy!


Products for 2 Wraps:

1.   2 Arabic flat breads, fresh and soft
2.   Half chicken breast
3.   1 very big potato or 2 small (or already cooked French fries)
4.   Half tomato
5.   3-4 baby pickles
6.   1 tea cup of plain yogurt
7.   1 big clove of garlic
8.   Salt
9.   Ketchup and mayo (Optional)
10. Cooking oil
11. Spices for the chicken breasts




How to Prepare the Products:

Cut the baby pickles on small cubes. Cut the tomato on 1 inch long thin stripes. Mix the yogurt until it becomes a smooth cream. Crush the garlic clove with a garlic press and add the paste into the yogurt. Mix the garlic with the yogurt and add salt.

Make French fries from the potatoes.(Or use the ready French fries)

Cut the chicken on small bites, add salt and the spices. Fry the chicken in a frying pan coated with few drops of oil. The chicken is ready when the meat gets white inside and out. 

Heat up the 2 breads in the oven for a minute.

How to Make the Doner Kebab Wrap:

Take the warm bread from the oven, spread 2-3 spoons of the yogurt sauce onto the upper side of the bread, from side to side. Add even amount tomatoes and pickles. Add as much as you like French fries and half of the chicken bites.
